Bacon, Brie, and Bourbon Peach Jam Grilled Cheese

Remember when I made this bourbon peach jam and mentioned that I had some ideas for what to do with it?  This is one of them.  And oh. My. Gah.  You guys.  This sandwich.  Each component of it is a decadent treat unto itself.  But when they're combined, very, very good things happen.  Buttery bread grilled to crispy perfection, gooey melted cheese oozing over the edges, salty, spicy pepper bacon, and sweet spiked jam--if loving this is wrong, I don't wanna be right.

Bacon, Brie, and Bourbon Peach Jam Grilled Cheese

Ingredients:
4 slices French bread
butter
1/4 c. bourbon peach jam OR
1/4 c. peach preserves mixed with 1/2 tsp. bourbon
4-6 slices brie
4 slices pepper bacon, cooked

Directions:
 1.  Place large frying pan over medium-low heat.  Butter one side of each slice of bread.  Turn bread over and evenly spread jam over each slice.  Layer brie and bacon on top of two slices of bread and top with remaining slices.

2.  Place sandwiches in preheated pan.  Cook until each side is deep golden brown and cheese is melting, 5-7 minutes per side.  (Cheese may turn slightly yellow from the jam and bacon drippings.  Yum.)  Serve immediately.

Yields: 2 sandwiches
