Cool Pineapple Salsa

This sweet salsa was the perfect accompaniment to Ellie Krieger’s quick jerk chicken. It was light, bright, and fresh. Though it can be made with caned pineapple, using fresh will yield far superior results.

Cool Pineapple Salsa

Ingredients:
1 TBSP honey
1 TBSP fresh lime juice
1 c. finely diced pineapple
1/3 c. seeded and finely diced English cucumber
1 TBSP chopped fresh mint

Directions:
1. In a medium bowl, whisk together the honey and lime juice. Add the pineapple, cucumber, and mint to the bowl and toss to combine. This salsa can be made up to a day ahead if stored in the refrigerator in an airtight container.
