Meatless Monday--Chopped Summer Caprese

As the saying goes, "What grows together goes together" and never is this saying more true than tomatoes and basil.  Sweet tomatoes and earthy basil are the perfect combination in my book and Caprese salad is one of summer's great joys.  I honestly don't think I could ever get sick of it. 


Chopped Summer Caprese
an "Apple a Day" original

Ingredients:
2 c. halved cherry or grape tomatoes
1 medium ball fresh mozzarella, cut into 1/2-in. cubes
1/4 c. fresh basil, julienne, plus a few small leaves for garnish
1 TBSP extra-virgin olive oil
1/8 tsp. each sea salt and fresh black pepper, to taste

Directions:
1.  Put all ingredients in a large non-reactive bowl and gently fold to combine.  Taste and adjust seasoning.  Serve at room temperature.  Serves 2.
