Meatless Monday--Chopped Summer Caprese

Whew! Thanks for sticking with me, friends.  I know I've been very absent lately.  But, you see, we moved!  We bought a fantastic new house and this happened:

Not exactly conducive to cooking, right?  But, as I promised on my facebook page. here I am.  Back at it with a very simple, perfect for summer Meatless Monday recipe.  As the saying goes, "What grows together goes together" and never is this saying more true than tomatoes and basil.  Sweet tomatoes and earthy basil are the perfect combination in my book and Caprese salad is one of summer's great joys.  I honestly don't think I could ever get sick of it. 

Chopped Summer Caprese
an "Apple a Day" original

2 c. halved cherry or grape tomatoes
1 medium ball fresh mozzarella, cut into 1/2-in. cubes
1/4 c. fresh basil, julienne, plus a few small leaves for garnish
1 TBSP extra-virgin olive oil
1/8 tsp. each sea salt and fresh black pepper, to taste

1.  Put all ingredients in a large non-reactive bowl and gently fold to combine.  Taste and adjust seasoning.  Serve at room temperature.  Serves 2.
