Basic Oven-Roasted Potatoes

Here you go. Oven-roasted potatoes 101. This is the basic procedure for one of my most favorite and comforting sides. Feel free to add any herbs and/or spices you'd like to make it compliment your main dish. Some of my favorites are garlic and fresh rosemary, chili powder, cumin, and thyme, or garlic and fresh oregano.

This recipe serves 6-8, so feel free to pare down the amount of potatoes. The oven temperature and cooking time should remain the same.


Basic Oven-Roasted Potatoes

Ingredients:

3 lbs. red or new potatoes
1/4 c. olive oil
sea salt and freshly ground black pepper, to taste

Directions:

1. Preheat oven to 400 degrees. Line a jelly roll pan with foil, dull side up.

2. Clean and cut potatoes (quarter for red potatoes, halve for new potatoes). Place in large bowl.

3. Coat with olive oil and generous amounts of salt and pepper.

4. Spread potatoes evenly over jelly roll pan.

5. Bake for 55 minutes-one hour. Let sit for a couple minutes before serving; the insides will be very hot.
